Extra tasty desserts from food blogger Judith

Just a little while and you won't have a drop of 40 days! challenge off. So a little party is in order. And what better way to celebrate than enjoying a delicious dessert? Food blogger Judith selected 3 very tasty recipes for the favorite part of the meal: dessert.

Oreo dessert with chocolate and raspberry

This Oreo dessert came about more or less by accident. I wanted to make dessert and one of my classics is chocolate pudding. I saw that I also had gluten-free 'oreo cookies' (AH own brand). And for the fresh note, some raspberries. Chocolate and raspberry is a classic combination.

This dessert is super easy to make yourself. It consists of 2 different flavors of pudding, Oreo cookies and raspberries and is delicious to make for yourself or for dinner with guests. Serve in nice glasses and you have made a super fun and delicious dessert in no time.

Chia pudding with mango and kiwi

Chia pudding is a dessert or breakfast made from chia seeds. So a chia seed pudding! You can give it a lot of flavor yourself and the good thing is that it is also healthy. Are you looking for a tasty and healthy dessert? Then this is a good contender.

Chia pudding recipe

By 'soaking' the chia seeds in (vegetable) milk, it becomes a kind of jelly. A pudding-like substance. Then add Greek yogurt or in this case plant-based yogurt for extra creaminess. As the only added sugar, a drop of maple syrup is enough. It also gets a sufficiently sweet taste from the fruit. Plus, we keep it as a healthy dessert :-)!

In this variant I went for a tropical topping of mashed mango and kiwi gold. For the mango I was inspired by fellow food influencer Muna. Together with the yellow kiwi it is really great. For some crunch homemade granola on top. Mmmm!

Of course you can vary with toppings and choose what you like! Blueberries are also popular, but virtually any type of fresh fruit will work. And even dried fruit! How about dried cranberries or raisins?

Healthy breakfast from the fridge

In addition to a dessert, this is also a more than fine breakfast! Simply leave the pudding in the fridge overnight. In the morning all you have to do is take it out of the fridge. Ideal to include in your repertoire breakfast recipes :-). I really enjoy having breakfast this way every now and then!

Making rice pudding according to grandma's recipe

Rice pudding or rice pudding is a delicious old-fashioned dessert! You actually only need very little to make your own rice pudding like grandma made it: dessert rice, sugar, milk, vanilla and some cinnamon for the top. Our grandmothers always used full-fat cow's milk, but a plant-based alternative is also fine. Think almond milk or coconut milk. These are also very tasty!

rice dessert

The rice grains expand considerably, which is why you need relatively little rice and a lot of liquid. Season the pudding with sugar and cinnamon. Super easy to make yourself, but also super tasty. You can eat the rice pudding either lukewarm or cold. You can even keep it in the fridge for a day.
