Apple fennel indulgence
For 4 glasses
- Apple 1
- fennel (with fennel green) 4 stems
- lemon juice 3 tbsp
- Apple juice 250ml
- fennel seed el
- sparkling water 1 l
- sugar 100 g
- Crush the fennel seed in a mortar. Place a cooking pot on the stove with 100 milliliters of water, the sugar and the fennel seed.
2. Bring to the boil and cook until the sugar has completely melted. Remove from heat and let cool. Pour through a fine sieve. Rinse the apple and cut it into wafer-thin slices. Rinse the fennel stalks.
3. Put a dash of the fennel syrup in a glass. Dilute with one part apple juice, two parts soda water and a few ice cubes. Garnish with lemon juice, a fennel stalk and a few slices of apple.
